  1. It is prosciutto which is air cured . This is thicker than my mothers mostly as the pasta is cooked in the beans. I made it like this as a college student usually with no ham. I had a few Roommates who would turn their nose up at this and all the traditional dishes i leanrd from Mom and Nona ( Mom was raised in Italy until about ten or so. ). But at say midnight studying for engineering school i would catch them snitching all this stuff, i mean pasta w squid, or octopus, sardine, whatever fish i would catch off the peir or buy. So after a bit i just raised the rent and covered board . Now thanks to the net folks see Italian food in its true greatness. It is nice to see.
