This is one of my favorite healthy cakes.
Dates, nuts and almond flour, itβs satisfying, moist and very good for you.
You will need:
2 cups almond flour
2 tsp baking powder
3/4 cup date paste/ almost 2 cupswhole dates
3 extra large eggs 65 g each
1/2 cup butter
3/4 tsp cinnamon
1 tsp vanilla extract
3/4 cup chopped walnuts plus more for decoration.
Preparation:
Soak 2 cups of dates in hot water for and hour. Peel, remove the pits.
Save 1 tbsp of the soaking water and add to the food processor. Process finely and set aside.
In a clean bowl and using a hand whisk mix the eggs and dates, flavor with the cinnamon and vanilla extract, add the very soft butter, mix well then add the flour and baking powder. Bake inside a well greased 8 or 9 inch pan. Bake 30 minutes at 350 degrees F or until a toothpick inserted comes out clean, enjoy this warm satisfying, healthy cake.

Guilt-free! Do you know how much sugar there is on the dates? They are 2/3 sugar!
Dang. That looks so yummy.
Guiltfree? Test your bloodsugar before eating this and 30 mins after you eat this and see your blood way higher in sugar. Which means an insulin spike. Never good. Looks very good though, but not guiltfree.
