Ingredients Needed:
– I used 4 lbs total of Chuck Roast and Boston Arm Roast (1 each) any roast will do!
– 4-6 Cups of beef broth (depending on how much gravy you want.
– Good Bread for the sandwiches
– Garlic Powder 1 Tsp
– Garlic Cloves (I used 10)
– Basil 1/2 Tsp
– Oregano 1/2 Tsp
– Black Pepper 1/4 Tsp
– Mozzarella Cheese
– Pepperoncini (or banana peppers)
– DON’T FORGET THE HOT GIARDINIERA MIXTURE! Get it HERE:
Directions:
– Sear your roast(s) in a hot pan with oil on ALL sides seasoning with salt and pepper
– Preheat your slow cooker (with beef broth in it) to LOW
– Place half the spice mixture (see video for clarification) into the broth and mix
– Place roasts into broth them add remaining ingredients (see video)
– Allow to cook ON LOW for 6+ hours or until fork shred tender
– Shred beef and allow meat to continue to absorb flavors in cooker for 1-2 hours for best taste
– Build your sandwich and ENJOY!!!!

Science behind what you are saying about turning down the heat and slow cooking before eating:
The very thing that makes cuts of meat like chuck and brisket tough and undesirable for a fast cook is also what makes them ideal for slow cooking. It turns to gelatin which soaks up the flavors and juices and those formerly tough spots are now what makes it crumble apart.
By pulling it out too hot, everything is melted and too liquid, so you lose a lot to drain-off. Just like making jello, you let it cool, so those reform and hold all that good stuff suspended in the meat.
That is a great recipe. Ive tried adding a couple of things to it and it brightens up the whole mixture. Ive added a AU JUS packet and an Italian salad dressing packet to the slow cooker, BOOM! 🙂 I also make a relish out of some giardiniera for the topping by tossing some in my food processor for a few seconds.
Great recipe, and yes, the house smelt great. The aroma woke the wife up at 2:00 a.m. and she fell in love with me all over again. Used leftovers for street tacos (leftovers of the beef, not the wife). Try dipping the whole sandwich into the cooker pot jus.

Glad to see you using pepperocinis- the magic ingredient most people don't use. I prefer to cook a couple of hours then put in the fridge overnight (sort of a marinade). Then the next morning slow cook it 8 hours or so and have it ready for dinner that evening. Like you I also shred and let sit in the juice a while before serving.
I prefer to use bell peppers and onions and I cook them with the meat. I also add mushrooms (my wife loves them with it). Good stuff.
We use Turano french rolls, just like the beef places in Chi Town. Turano was designed for Italian beef. They hold up to the juice overload, but are remain tender.
Hmm, I make these at least once a year. Yet I've made them in the Instant Pot. Also, I added some tomato paste to the broth. I lived in an Italian neighborhood & the company my father worked for would have these for the folks that attended the summer party. Also, I use some celery.
This is the ONLY recipe I use my family.

I love to continue to recycle that beef gravy multiple times between the freezer and crock pot. The flavor just intensifies and sometimes i toast the bread in the oven with garlic. Looks delicious

I worked in an Italian sandwich shop 60 years ago and as I live in Chicago I still can get a great beef. Nothing I have seen here is familiar and comes even close to what I have eaten. Roast the beef with garlic cloves inserted into the meat, rubbed with oregano and rosemary and paprika. When cooked place in the fridge and slice thin the next day when cold.
