It's Colcannon and it's pronounced Cal Cannon. Growing up in Dublin my Mam always made it with mashed potatoes (obviously), butter, milk, curly kale, finely chopped scallions and salt. A specialty around the Irish festival, Halloween or Samháin the original name.
Apart from the amazing food, I would be interested in how this stuff usually works when you get to such events. Do they basically hire you (paying a salary etc.) and providing the ingredients and you cook and sell the food?
