The corn and black bean mixture was from the Southwest Salad I made on live (linked above), taco meat from the night before that and obviously, fresh cut sweet potatoes, baked. It was delicious and all went together…can’t be mad at that!

It’s so funny bc yesterday I made chicken with sweet potatoes and today I used the leftover sweet potatoes in my beef stew 😋 honestly growing up we didn’t have much leftovers because my mom didn’t cook “big” if that makes sense lol we ate what we had and if by chance there were leftovers it went over white rice with beans the next day 😄
