Happy weekend, everyone. Today, I have this ultimate all-in-one Mediterranean chicken recipe for you. The best part is that the oven does all the work. The recipe will be down below as always.

RECIPE:
– 1kg chicken legs
– 1kg baby potatoes/ I peeled and halved the large ones and left the small ones unpeeled
– 2 zucchinis
– 400gms carrots
– 8 rashes of smoked bacon

FOR THE MARINADE
– ¼ cup of olive oil
– ¼ cup of lemon juice
– 2 tbsp white vinegar
– 2 tbsp balsamic vinegar
– 1 tbsp each crushed garlic and ginger
– 1 tbsp garam masala
– 1 and a half tsp sea salt
– Pepper to taste
– A handful of chopped parsley
– 1 tbsp honey
– 1 tbsp oregano
– 1 tbsp mixed herbs for the potatoes
– Salt to taste for the potatoes

I marinated the chicken for an hour and removed it from the fridge 30 minutes before to let it come to room temperature.

Rinse and pat dry your zucchini before seasoning it with olive oil and putting it into the tray.

– Preheat the oven to 180℃ fan-assisted oven/ 200℃ conventional oven/ 400℉ for 55 minutes, adding the zucchinis with ten minutes remaining to avoid them getting soggy.
