-1.3Kilo pork belly sliced into chunky cubes
-1/2tsp salt and ground black pepper
-2pcs chopped onions
-8cloves garlic
-1 and 1/2cup pineapple juice unsweetened
-1/2cup soy sauce
-1/2cup light brown sugar
-3pcs dried bay leaves
-1/2cup vinegar
-100g salted black beans (rinsed in running water then strained)

  1. What makes humba different from any pork preparation is star anise. If I have to skip adding an ingredient,I’ll pick either beans or banana blossoms. I’m sure this dish is still delicious without star anise but star anise is the key ingredient in making humba. I won’t call it humba without it. It’s like making sinigang without the pampaasim.
