Bloom the yeast in water before adding to dry ingredients. Salt may have killed the yeast when added all at once. I think it still came out great.

Wouldn't the result be different if you bake the bread in a big oven instead of the mini oven you have? The small ones reach their temperature way faster than the big ones.

I think the thick ceramic baking pan kept the dough colder for longer and inhibited the rise.

In Italy for baking we do not use semolina but regrind semolina .
That's not bread.
I have that pan and I use it to make my regular bread recipes. If you get the recipe size right, it works like a pullman pan. You can rise it in the baker, then put it in a hot oven and you will get oven spring. Hope that helps.

Okay I love the way the texture of that looks. I have trouble chewing things so that looks ideal to me. Do you think just as a cold oven start it would be okay without the cooker? I do have a smaller dutch oven but I'd have to make it a ring or something (vs a blob in the middle) to have the bake time be similar-ish.
The bread on the main cam looked like cake with how yellow it was. Never noticed the difference in camera settings until now. Maybe the other one was a bit over-exposed
