Yup always made curly shrimp when I line cooked at a major chain.

My method is to bring a pot to a boil, add shrimp, close heat and cover…juicy cooked shrimp a few minutes later

Nothing worse than rubbery shrimp. You want a Lil of that shellfish bite, but not sausage snap. 🤮
Or… gently poach them in butter.
I use baking soda to help keep the shrimp from overcooking
