Provata la ricetta: ottima. La trovo molto delicata, pur essendo romano eviterei di aggiungere pancetta o guanciale, ma questi sono gusti ovviamente.

Con il coltello fare un taglio un po' giù la parte bianca fino alla fine della parte verde. Ricominciare una seconda volta in modo di fare una croccia …
Poi dentro Aqua abbondate usare il poro come si era un pennello agitare vigorosamente..☺️
Per la versione "carbonara" aggiungerei lo zafferano… così ricorda meglio la ricetta originale.
