This super nostalgic, delicious and satisfying ingredient is perfect for home or restaurant use. It’s one of my favorite things that I grew up eating.
Hot Italian Sausages with pasta and my recreation hit the spot. I make in big batches and freeze into portions for later.
This is AWESOME! And I’ll be working up a couple more dishes to apply it too soon.

The book referenced that i’ve read is called, Food of Bodhisatvas
THE RECIPE:
HOT Italian TEMPEH / TOFU Sausage crumble
2, 200g Blocks Tempeh
1 450g black EXTRA Super firm TOFU
2 TBS Fennel seeds, ground and pound
2 TBS Oregano
1 TBS Garlic, granulated
1 TBS Onion, granulated
1 teaspoon Red Pepper flakes (for spicy)
3/4 teaspoon White peppercorn, ground and pound
1 teaspoon Smoked Paprika
1 lemon zested (optional)
1 cup Olive oil
½ Cup Red wine (optional)
1 garlic clove, sliced
2 Star Anise, whole
On low heat, heat oil with fresh garlic and star anise, until hot.
Combine rest of the seasonings in a bowl,
Slowly add hot oil and let sit for a minute.
With a fork, whisk in red wine
Marinate 30 mins or overnight
Roast 30 minutes
For best results, cool and then use for recipes.
The longer it sits after roasting the better and more intense the flavor gets.

Sorry, I wrote my first comment too soon. Your's is looking like a more complex version off the base recipe I know. The infusion if star anis and garlic is especially enticing 🤓. The chilies are, of course, the deal maker. You can't convert the "already practicing" when it comes to plant based eating, but as far as the Gospel of Sausage Spice is concerned, I'm adding this one to my Bible! Thanks a lot!! 🙏🙏
Oil, or no oil? That is the question. Dude, you are in the UK, where the primary motivation for veganism ist morality. In the US the leading cause of a dietary changeover to "plant based" eating is for health reasons. The epidemiology in population comparison is clear, the "health egomaniacs" in the US, who are predominately oil free, are much healthier than the "moral vegans" in the UK. That's why, I think, the "no oil" camp is ragging you all the time.That having been said, I have a very similar indulgent sausage recipe too! I use just Tofu (I will try your suggestion of a tempe mix though) with Andoullie spices, fennel, sage, oregano, garlic and smoked paprika. I use a bit less oil, but salt and oil none the less. If I'm going to massage my soul, then I'd prefer an oil massage, thank you very much 😱😇😎🤣🤣🤣

I love that unlike meat, you can taste as you go and use the marinade the veggies have soaked in without worrying about food poisoning. And I love your ramblings and, of course Miss Frankie is the best.

I use freshly ground fennel in my seitan pastrami recipe. Every time I make it I just love using the mortar and pestle to grind it up. Nothing beats that aroma.

I appreciate The way you explain eating plant-based for health reasons versus protecting the animal. I went plant-based almost 5 years ago, now to have a healthier life as I get older, but it quickly transitioned into, including to protect the animals. That was after watching documentaries on YouTube with the slaughter houses and it’s not like I didn’t know I grew up on a chicken Farm but also had pigs and hundreds of acres of vegetables. That was just the way of life and I didn’t see it any other way. Besides, having better health, the cruelty, and the needless killing of animals will be the reason I never go back to eating them.
Derek, when you move back to the States maybe open a little restaurant or vegan food truck if you don't want the overhead of running a restaurant. Where in the States will you be relocating to?

The seed oils are dangerous. Olive, Coconut, and Avocado oil is a great option me! ❤
