  1. So total time was only three hours? Will you break that down – how long unwrapped to start, how long wrapped and how long at the end, unwrapped? Also, how lathe was the rack? I smoked four racks yesterday, 4+ pounds pre-trim weight that probably weighed 3.5 pounds after trimming off excess fat, extra hanging meat, etc. Total time was about 5 hours. 180° unwrapped one hour. 250° unwrapped two hours. Wrapped with butter, sauce extra rub, 90 minutes. Then 15 minutes 275° unwrapped with a glaze. They were nice and moist, tender with a pull off the bone/bite, but definitely took longer than three hours. I’m wondering if it was due to a lower temp to start, a larger rack or a combination of both. I’m cooking on a Recteq RT-1250.

  2. Nice work and they look great question for you though you smoke it 275 just to cook quicker and render the fat or you don’t want as much smoke flavor. Couldn’t you smoke at 180 for an hour or two and then kick it up to 275 so you’d have a little better smoke flavor.
