Pork Chop Sizzler with a Mushroom-Pepper Sauce: Inside the Trincas Kolkata Kitchen



Welcome to a new series on our channel, where we go behind the scenes at restaurants that fascinate us, to learn what goes into bringing us the lovely meals and happy times we enjoy when we eat out. This is the fourth and final episode, featuring Trincas Kolkata’s signature sizzling pork chops in a mushroom-pepper sauce.

This video includes a recipe of the brown stock that forms the base of many dishes on the continental menu. In this dish, it will be used to make the mushroom pepper sauce that goes with the pork chop.

**This recipe is a good example of Calcutta-style continental cooking— continent here presumably referring to Europe. The cooking is very unorthodox. It uses lots of local flavours and cooking-styles, and plenty of spices in European inspired recipes.**

The ingredients reflect the various communities that have lived together in Calcutta. That is how you end up with Chinese oyster sauce and British Worcestershire sauce in the same marinade.

  1. I am a through and through Calcuttan and take pride in the variety of the food scene in the City of joy. However I find many of these are overhyped and overpriced, at least overhyped in their present-day form. Not saying this in particular about the pork chops at Trincas as I havent tried it but it applies to Peter cats chello kebab for example. Agree these places and their signature dishes stoke nostalgia for those who care about it but the dishes may not necessarily delight your palate!

  2. Ardent request to cover other legends of that area.
    Chicken Ala Olypub, Beef Steak at Olypub,
    Chicken steak sizzler and ofcourse the chello kabab from Peter Cat.
    Golden Dragon er Roasted Chilli pork
    And ofcourse there is Mocambo.

    Shift over to other places from Park Street too if possible. Please please please do these.

Not a great taste tester but the moment I tasted this dish I knew there is a huge process behind making this ,especially the sauce… And you can hardly find an alternative to Trinca's mashed potatoes with roasted peas, simple yet delicious 🤤 Thanks to "The Bong Eats Team".. You've made it possible for us to take a look at the great effort they make before serving it on the table ❣️

  6. I came all the way to Europe to find the roots of Calcutta’s charming Continental delights but it’s something unique to my own city. Now I crave to come back and savour Calcutta’s scrumptious delicacies once more. Thank you Bong Eats for this series. Thoroughly enjoyed a walk down the memory lane.
