BEEF and CABBAGE CASSEROLE RECIPE

Beef and Cabbage Casserole Recipe

INGREDIENTS:
5 cups diced cabbage
1 1/2 to 2 pounds ground beef
1 medium diced onion
2 diced carrots
1/2 cup diced bell peppers
1/2 cup uncooked rice – I used jasmine rice
1 1/2 cups beef broth
1 – 28oz can diced tomatoes
3 cloves minced garlic
1 tsp. oregano
salt and black pepper

In skillet on med high heat brown and chop ground beef until no longer pink.
Add onions, carrots and minced garlic.
Cook and stir for 3-4 minutes.
Turn off heat.

In bowl add meat mixture, uncooked rice, diced tomatoes and spices.
Mix well. Add diced cabbage and mix well.

Add ingredients to baking dish. Pour over beef broth.
Cover tightly with foil.
Bake at 350 degrees Farenheit for 1 hour.
Remove from oven, add bell peppers, stir well,
return to oven and bake for 30-45 more minutes or until cabbage is tender.

Remove from oven and let rest for 15 minutes before serving.
Enjoy.

Lazy Man's Stuffed Cabbage . . .make meatballs with onion/ dry minute rice. . .chop Onions/Cabbage into roaster, top with meatballs, pour canned diced tomatoes drained of water, bake uncovered, then top with undiluted tomato soup, continue baking covered.. The more cabbage you use, the more water you get from cabbage. Always put green cabbage on the bottom , they need more heat than white cabbage cores.

  2. I tend to call tgis deconstructed cabbage rolls. I quit making them rolled bc it is wasier to make them in a pot and without rice to accommodate our low carb way of eating. Thus made me hungry of course! I'm a Polish girl who loves cabbage & sauerkraut. Many Blessings to you!
