Ground Beef And Hashbrown Casserole
1 pound ground beef
1 onion chopped
1 large Bell pepper chopped
Salt and pepper
1 cup mushrooms
3/4 cup frozen peas
1 T. Minced garlic
3 1/2 cups hashbrowns
1 can cream of celery soup
1 can cream of mushroom soup
1 cup milk
1 1/2 cups shredded cheese
Salt and pepper to taste
350 oven. Cover cook 30 minutes uncovered cook 10 to 15 minutes

Love your recipes but, with grocery prices, this isn't a cheap meal. With meat prices, lentils need to be used when meat prices preclude purchasing it. Soup? More cost. Use some stewed tomatoes you've grown in your garden. Cheese? That's an expensive item these days too. Growing up, we had macaroni with stewed tomatoes and some times some chopped onions at least once a week.

Your casserole looks delicious. I would have to leave the green peas out of it because my husband won't eat those, but I bet it would still be good. I'm definitely going to have to try this one. Thank you for sharing it.
Hello Mrs. Lori. I was born 1950 with 4 siblings. We didn't have alot of food period. We ate alot of homemade bread, hard boiled eggs and pancakes. I got a Betty Crocker Cook Book and fell in love with the Tuna Casserole and Mexican. When I was in my early 20's Mom would go away and Dad would make a beef and Dumpling Stew. It was to die for. My Mother has a "MAN FRIEND" who grew up on a farm. He said his family would raise and butcher 1 hog per person per year. The kids would walk the road and pick blackberries and his Mother would can 100 jars of blackberries each year. They also raised a huge garden each year and canned that too. She canned enough for a year. They had milk cows too. Other than a few things they were totally self sufficient. They were all healthy and lived a long life, he's 90 and takes a prostate pill and a blood pressure pill…that's it. He walks our neighborhood everyday. He's retired from 3 different jobs (automotive plant, a policeman where he was hit by a car and broke his back and has a rod in it) and just retired from a Funeral Home, and draws his Social Security! He and Mom go camping in the spring and fall. He still drives, raises a garden, cooks and cleans for he and his disabled son, keeps his lawn cut and pruned and washes his car, truck and camper frequently. He meets with elderly men every morning except Sundays because he stays with my Mom every Saturday night. My Mom is 84 and he phones her 3 times per day to make sure she's OK. They laugh and carry on. They are both precious! They are both widowed. Mom has been on continuous oxygen for the last 10 years. I attribute her long life to his sweet friendship…

Love casseroles and thanks for sharing your awesome cooking and pantry skills, Ms. Lori! In the summer when peppers are plentiful, I roast them over a flame or the charcoal grill, pop them hot in a paper bag, let them steam, take them out and remove the skins, when cool, bag them up in sandwich bags destined for the freezer. When I need peppers for a dish, it's only steps to the freezer and boy, do they elevate the flavor! 6 year-old Granddaughter helped me with dinner one night and found out how easy it is to put a filling nutritious meal together from pantry & freezer. She's a quick learner and we are so blessed!
This type of caaerole is great if you have smaller amounts of veggies you need yo use up yummy
I was brought up with a mom and dad that had little money.. casseroles were a staple in my family. My dad was German mom Irish… they never had spaghetti or lasagna… if we had a casserole it was a lot of this and that and in some type of gravy or white cheese sauce…

I've made several different Casseroles like this by just throwing stuff together. They're all different and taste so good! I've made one with chicken, rice and veggies, Cornbread dressing and roast with veggies n gravy, BBQ, Mexican, etc… They were all so different but so good! I've done that since my kids were young and now they're grandparents! Lol. Yours looks so good Miss Lori… I'll have to make it. We don't throw away nothing. Our leftovers are the makings for another Casserole of some kind. Food is like Gemstones, its so expensive and will make something more expensive! I might not wear it around my neck or on my finger but I'll wear it around my waistline! Lol. Thank you for your Casserole! God Bless. 🙏❤
PS. Do y'all still have Snow n Ice? Here in N Ga Mtns, We still have quite a bit of Snow n Ice! Schools are still closed along with alot of businesses still. People are still outta work. It's been so cold. We're still going down into the teens and low 20's at night and upper 20's to low 30's during the day!

I love what I call Tater Tot Casserole (HB meat, green beans or mix veg, cream of mushroom soup, top with tater tots, and bake), it's so yummy and comforting. I've been thinking about making a similar one, like soup, in the crock pot, HB meat, green beans, diced potatoes, cream of mushroom soup, and maybe add some sliced mushrooms. That will be quick and easy, and great for these cold days we're having right now. I've never really used cream of celery soup in anything. 😊

What I like to do is make up a "family size" casserole, then I freeze the leftovers for future meals! I can't tell you how many times this has come in handy. Family, friends or church members might need a meal and there you go! A ready made meal for someone, or yourself, just needs to be warmed up.
Hashbrown casserole is one of my family's favorite casseroles! Hashbrowns with fried up bacon bits and eggs…yummy! Yours with ground beef and what ever veggies and cheese you can find, I happen to love a good old fashioned tuna or chicken casserole as well! 🥘

Hello from Virginia 👋. I was born in 1949. My large farm family ate from the garden and from a calf and a pig killed on late fall early winter. We created meals out of what we had or could barter for. We had chickens and eggs most of the year and two jersey milk cows. We were poor, but never hungry. Those casseroles, soups, stews, and homemade pies surpass almost any “normal” food people today. Thank you for bringing back some of these memories.

Good any time of year, but these are sooo tummy warming and comforting to the soul in these bitter cold January temperatures! I know the smell of that baking over in the kitchen plus the smell of your wood fire made for a cozy winter cabin!

We eat a lot of casseroles. Sometimes I follow a recipe and sometimes I make one up as I go along. Helps stretch meat. Learned about that growing up. I grew up during the late 1950's and 1960's. My family of 3 kids and two parents was not too poor but we did not have a lot. We had a garden in the summer and we ate a lot of tomato sandwiches during the summer and lots of BLT's. Had fresh vegetables like green beans, peas and carrots.

I’m a single woman but I love casserole! I make a different one every week usually a 9×9 . I have dinner and 3 lunches then freeze 2 so as I rotate through the freezer I never eat the same except the 3 lunches. When my stash gets low I just either make another one or up the weeks size to 11×13❤
