  1. Well, i have been making sourdough for 2yrs now. Its not correct to say that u need only bread flour for starter. You can use all purpose flour without any issues. I live in colder place and still it rises beautifully. Made my own starter with rye and wholewheat and after day 5, started using all purpose flour. Have made many loaves without any issues. Rising also depends on the water and flour ratio and if u stir it once after 3-4hrs – it works even better and rises much better (works for cold places)

    Also, cold bake works great, too. Once i got results, i never went back to preheating. Just pop directly out of the fridge. I do my design first before poping in oven but do the big score 7min into oven to get that ear ❤

  3. First, small batch size making bread is a big headache. Second, Yeast that commercially available is also of the same variety as the one that is developed using the starter. It is really a headache to continuously feeding the live yeast that we have to create. Many great bakers have a old live yeast.
