INGREDIENTS :
6 racks of pork ribs
2 tbsp oil
2 tbsp chopped garlic
1 small onion chopped
1-2 bay leaves
1 small cinnamon stick
pinch of turmeric
1 small ginger
1 tbsp crushed pepper
1 tbsp soy sauce
some salt
For the Sauce:
1 tbsp soy sauce
1 tsp schezwan sauce
1 tbsp oyster sauce
2 tbsp honey (or brown sugar)
1 tbsp pepper powder
METHOD:
Cut the pork ribs into individual pieces and wash thoroughly.
Heat 2 tbsp oil add chopped garlic and saute for a few seconds. Next add chopped onion, cinnamon, and bay leaf and saute for 1 minute.
Add ribs and saute for 3-4 minutes, stirring occasionally, until they change color and turn white. Add ginger, pepper powder, salt, turmeric powder, soy sauce, and 2 -3 cups water. Mix well, cover the pan, reduce the heat to medium, and cook for 1 hour (until they are tender and meat starts to easily separate the bone).
In a pan, heat 1-2 tbsp oil and add the cooked ribs to the pan. Sear them on both sides until they develop a nice golden-brown crust about 2-3 minutes.
Next, add 1 tbsp soy sauce, 1 tsp schezwan sauce, 1 tbsp oyster sauce, honey and give a good mix.
Saute for 1-2 minutes and then add roasted pepper powder mix well and done.
Enjoy hot, juicy, flavorful pork ribs.
