I Got Schooled by the Most Misunderstood Man in BBQ

Before there was Aaron Franklin, Texas BBQ was pioneered by a few butchers who learned to cook BBQ as a way to prevent food waste. Join me as 3rd generation owner and pitmaster Wayne Mueller tells us the story of his father Bobby Mueller and his grandfather Louie Mueller who was one of these pioneers – and as he teaches me how to make their world famous brisket, beef ribs and sausage! And watch next!

Check out the new Woodridge line of pellet smokers from Traeger at or visit your local Traeger dealer and get started on your own BBQ journey.

Welcome to Behind The Food TV! On this channel I document my journey to become a better cook. I travel to meet chefs and pitmasters at the top of their game – and somehow convince them to teach me the techniques that make their food special. I enjoy getting to know them, their families, and their communities – and I hope you enjoy it all just as much!

When I get home, I love to try these new techniques I’m learning – and I post those videos over on my new channel @EatMoreVegans with my other BBQ experiments and tests – so if you’re looking for my BBQ cooking videos, they are all moving over there!

  1. Al- Once again a killer story. I get a tear in my eye every time I watch one of your videos. Thanks again. Also for your Fette sau visit. This St Pats pastrami was a winner. Hope you, Leah and Teddy are healthy and doing fine.

  2. This is how BBQ stories should be, but Louie Mueller wouldn't be what it is without Fred Fontaine. This is the guy that a lot of the older people come back to talk about when Louie Mueller BBQ is talked about. He is the man who put it on the map. Wish i was alive to try his style. I just have the stories, which are just as good to give myself an imagination. Though this story was so interesting to watch , I would like to see more of this storytelling of big BBQ joints.

  3. Al, kudos on another great episode that proves the only thing better than Texas BBQ are the people who make it. Thanks to Wayne Mueller for sharing the depths of your soul. It is a great life lesson for us all about not leaving anything unsaid with our loved ones. Your dad and grandfather are so proud of you. Thanks to you, we will never forget them. And we will never forget you.

  4. Sorry, I am a little late to the show here, but truly another incredible story. The family history is absolutely amazing, and the cooking details are unparalleled! These must be the most hands-on (and unique) procedures I have ever seen. Thank you so much for taking the time to share this with us.

  5. Al,
Great video! So many interesting techniques and mechanics here, but the whole story you help reveal is amazing!
There is even more here with John and LeAnn Mueller and their influence too, but Wayne seems to be very polite about all this. Btw, Franklin worked at Mueller’s at one point!
So one question is why doesn’t anyone build the brick pits anymore if the airflow is so tremendous? Obviously they are not moveable.
I can’t wait to see your cook of this style, but if the replication of a 1,000 gallon pit on a backyard pit is almost impossible, this may be even more difficult!
Keep up the great work and it is amazing to see your constant progress!👍

  6. My first true Texas BBQ place. Before eating here, all I knew was gas station/fast food BBQ and I didn't know that I was not experienceing true Texas BBQ. I will always remember that WOW factor and that is what I look for when I go to any BBQ place these days. I recently moved to Houston from Austin and I had to go back to Louie one last time before I left. It was excellent as always.

  7. Lived in Conroe Texas most my adult life , I was a Hiway Concrete Slipform contractor, Sllip formed the Concrete Median Barrier Safety Walks that divided Interstates and Safety Bridge Walls all over Texas, Can't belive I never heard of this famous place , Live in Alabama now after retirement , but will make trip to Texas this year to eat at Louie Mullers BBQ , Brother thank you for sharing your family story, Your life story mirror's my story of raising life and values. Your Grandfather father story shines through time and life through you . BLESSED.. THANKS FOR SHARING. RANDALL . AMEN.

  8. It's going to be fun to see other channels like Mad Scientist, Smoke Trails and Ant try to cook brisket the same way. It's like a primitive but simple solution to the aerodynamics. Just hammer the uneven part. Very cool to see this and for Louie to just let us in on their trade secrets.

  9. I see a theme with BBQ institution owners….. Humbleness. Rare these days. Yes this guy needs to be remembered! He keeps the business alive and makes needed changes and tweaks to stay competitive while staying planted keeping with his family legacy. I'm sure your father and grandfather would be proud. No one else brings the personal aspect like this channel. 100 times better production than anything on the TV. Another great video by BTFTV!!!! Great Sunday afternoon watch. Look forward to these.

  10. Al your videos and stories are far superior to anything out there. You keep topping yourself with every one. Louie Mueller’s is truly a legend in Texas bbq and you did an excellent job sharing their story.

  11. I lived in Austin for years. I'm so happy someone has actually let Wayne tell his story. Wayne and his dad went through a lot when the other son went against them. Wayne, his dad, and grandfather are true legends of Texas BBQ.
BTW, I always have thought frankin BBQ is overrated and over hyped.
Mueller, in Taylor, Snows in Lexington, Blacks, Smittys, and Kreutz in Lockhart are the OG of Texas BBQ. All the rest are just newcomers.
