This could have been a really useful video but what ruined it was the stupid guitar twanging making the voice over very difficult to follow.
Looks good, There will be a lot of fat and debris to be removed from the cooking liquid to make a gravy. Strain it with a fine mesh strainer and spoon off the fat.
