Chicken Chapli Kebab
Preparation time 10-15 minutes
Cooking time 20 minutes
Serve 2-4
Ingredients
For Kebab Mixture
1 kg Chicken mince, चिकन का कीमा
1 heaped tbsp Tender coriander stems, finely chopped, धनिये के डंठल
2 medium Onions, finely chopped, प्याज
1 large Tomato (seedless & finely chopped) टमाटर
3 no. Green chillies (less spicy & finely chopped) हरी मिर्च
1 inch Ginger (peeled & finely chopped) अदरक
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
1 no. Whole egg, अंडा
Salt to taste, नमक स्वादअनुसार
4 no. Boiled Eggs, उबले हुए अंडे
Salt to taste, नमक स्वादअनुसार
1 tbsp Gram flour, बेसन
For Onion Salad
1 large Onion, sliced, प्याज
1 tsp Roasted cumin, crushed, भुना हुआ जीरा
Salt to taste, नमक स्वादअनुसार
1 tsp Lemon juice, नींबू का रस
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Green Chutney
½ medium Onion, प्याज
4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
½ cup fresh Coriander leaves, धनिया पत्ता
¼ cup fresh Mint leaves, पुदीना पत्ता
2-3 tbsp Tamarind pulp, इमली का गूदा
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 inch Ginger (peeled & sliced) अदरक
Other Ingredients
Oil for shallow frying, तलने के लिए तेल
1 large Tomatoes, sliced, टमाटर
For Garnish
Coriander sprig, धनिया पत्ता
Pomegranate pearls, अनार के दाने
Process
For Kebab Mixture
● In a bowl, add chicken mince, tender coriander stems, onions, tomato, green chillies, ginger, fresh coriander leaves, whole egg, salt to taste, boiled eggs, salt to taste, gram flour and give it a good mix.
● Wet the hands with water, take a portion of prepared mixture, place the tomato slice on one side and give it the desired shape.
● In a pan, add oil, once it’s hot, place prepared kebabs and cook it 4-5 minutes until golden in colour on both the sides.
● Transfer it to a serving platter, garnish it with coriander sprig and pomegranate pearls.
● Serve hot with prepared onion salad and green chutney.
For Onion salad
● In a bowl, add onion, roasted cumin, salt to taste, lemon juice, degi red chili powder and give it a good mix.
● Keep it aside for further use.
For Green Chutney
● In a bowl, add onion, green chillies, fresh coriander leaves, fresh mint leaves, tamarind pulp, salt to taste, degi red chili powder, ginger and mix it well.
● Transfer it to a mixer grinder jar and grind it into a smooth paste.
● Keep it aside for further use.

Chapli Kebab – A Culinary Classic from Pashtun Cuisine
Originates from northern Pakistan and Afghanistan, especially popular among Pashtun communities.
The name “Chapli” comes from the Pashto word “chaprikh”, meaning flat, reflecting its signature shape.
Made with coarsely ground beef or mutton, giving it a hearty, rustic texture.
Infused with aromatics and fresh herbs:
Finely chopped onions, green chilies, coriander, and mint.
Spiced with a bold blend of:
Garam masala, crushed cumin, coriander seeds, red chili powder, and sometimes sumac or anardana (dried pomegranate seeds) for tanginess.
Gram flour (besan) or crushed wheat is used as a binding agent to maintain structure without drying it out.
Formed into flat, disc-shaped patties by hand.
Shallow-fried in oil until the edges are crisp and the center remains juicy.
Occasionally topped with a whole egg yolk or a sunny-side-up fried egg for extra richness and visual flair.
Typically served with naan, green chutney, lemon wedges, and sliced onions — perfect as an appetizer or a hearty main.
