Filling Chicken Burrito Recipe👇

The guy that won the first Filling Meals Challenge was smashing these for lunch. So yum. I got the protein up to 50g and the fibre is decent too. Key is to simmer down the mix so they don’t get soggy when you wrap them.

Nutrition – 4 x 500 kcal (50P, 54C, 11F) + 6g fibre

4 high protein wraps (Rowan Hill)
500g skinless chicken thighs
200g black beans (drained weight)
200g red pepper
1 medium onion
30g fajita seasoning
100g enchiladas sauce
250g low fat cottage cheese (blended)
50g mature cheddar cheese

These are simple. Just fry the onion then brown the chicken till it looks sealed. Add the seasoning, peppers, enchilada sauce and beans. Let it cook for a further ten minutes then stir in the cottage cheese and cheddar. Wrap them up and van fry to seal.

Note – these freeze well so if you like them feel free to double or triple the batch the second time 🔥
