Ingredients
Beef steak – 300 grams ( rump, chuck, ribeye, sirloin or a choice of tender steak cut. )
Mushroom – 250 grams ( Chestnut mushrooms, button, white, cup, or a choice of mushrooms. )
Onion – ½
Ginger – 3-4 slices ( cut thin strips )
Dried crushed chillies – 1 tsp ( optional )
Spring onions ( green onion/scallion ) – 2-3
Cooking oil 2-3 tbsp
Garlic 2-3t
Beef Marinade Ingredients
Grated ginger – 2 tsp
Regular soy sauce – 1 tbsp
Sugar – 2 tsp
Cornstarch – 1 tbsp
Cooking oil – 1 tbsp
Baking soda – ½ tsp ( half tsp )
White pepper – ¼ tsp
For Stir Fry Sauce
Oyster sauce – 3 tbsp
Regular soy sauce – 1 tbsp
Dark soy sauce – 1 tsp
Sugar – 2 tsp
Water – 1 tbsp
Chinese Cooking Rice Wine – 1 tbsp
Cornstarch – ½ tsp
White pepper – ¼ tsp

Again, may I ask? … Why do you cook (0:45) with so little onions and mushrooms? If it were me, I'd cut the meat down in half, and then cook with 2 or 3 times as many onions & mushrooms.
Or, is this just an Americanized version of this? Maybe, you are cooking this way for Americans, because I guess a lot of Americans want more meat vs. vegetables. But, I love it flipped.
