This soft peanut butter cookie topping is for… something special.
Any guesses what I’m making?
I creamed softened butter and peanut butter together by hand, then mixed in coconut sugar until smooth. Added an egg yolk, vanilla, flour, baking powder—just until a soft, crumbly dough formed.
You can freeze this between parchment + use it later, or just bake it as cookies!
Drop, slice, or roll + bake—just keep the dough very cold.

• 75g butter, softened
• 50g smooth peanut butter
• 90g coconut sugar
• 1 egg yolk
• 1 tsp vanilla
• 150g all-purpose flour
• ½ tsp baking powder
