400g/14oz Chicken breast or thigh
½ Onion
2-3 Garlic cloves
1 tbsp Ginger grated
3-4 Spring Onions
6-8 Dried chillies, cut and deseeded
1 tsp Sichuan peppercorns, crushed
100 g Peanuts
2-3 tbsp Peanut oil or cooking oil

For Chicken Marinade
2 tsp Light soy sauce Or all-purpose soy sauce
½ tsp Baking Soda
1 tsp Sugar
1 tsp Cornstarch

For Kung Pao Sauce
1 tbsp Light soy sauce Or regular soy sauce
1 tsp Dark soy sauce
1 tbsp Shao Xing cooking wine or rice vinegar
2 tbsp Oyster sauce
2 tsp Sugar or honey
1 tsp Sesame oil
½ tsp Cornstarch
