  1. Excellent recipe. I have retired to San Miguel de Allende, Mexico & always felt Spanish paella was a bit bland. I decided to make a Mexican paella by adding 2 sliced jalapeños & chili flakes. I also substituted zucchini & artichoke hearts for the beans. Fantastic result! Thank you! Jim

  2. I just finished watching this on TV. I love most vegetables, & yet am so delighted to see how this turned out in the end.
    Absolutely stunning to look at, AND, I can almost taste it. Seriously.
    Becky, what a perfect selection of vegetables to create the perfect 👌 taste, overall. Amazing.
    I live in the midwest, where most people eat meat constantly. I'm not like that anymore. I'm a near-60 year old woman.
    I cannot wait to prepare this for myself, as well as two out of three of my adult kids. I am looking forward to showing off this gorgeous dish.
    And, IF anyone would be happier with meat, that can be done, simply add some sicken strips, etc. But, not for me. Thanks so much, Becky. ✅ 👍 👋

  3. I have recently become fascinated to find that almost every cuisine has a dish that breaks down to: beans and rice. Glad to have a Spanish or possibly American Spanish dish checking in on this.
