I’ve never had or made zucchini bread but a friend gifted me a bunch of zucchini so I decided to give it a try. The Sweetashoney recipe was delicious!! The only thing that disappointed me is that I didn’t have any nuts to put in it. I’m making another loaf to give as a thank you to my friend. This is definitely going in my Keto keeper box of recipes. I can always count on you Wes to lead me down the right path of deliciousness!!❤❤

I combined the two recipes. I used the 1 and 1/2 cup of zucchini amount and nuts from the first recipe, and also the spices used in the first recipe. The rest of the ingredients are from the second recipe. Turned out phenomenal!
Keto Connection mentioned that coconut flour has fewer calories than almond flour, so that may be a consideration for some folks.

Do you suppose that you could do a similar bread, but with rhubarb. I imagine more sweetener would be needed, but I wonder if it would work? And thanks Wesley!
keto zucchini bread – cut and ate while bread still a bit warm – delicious – great with or with out butter – may have put a bit more cinnamon but it worked great. interested in seeing how the texture changes over the next few days
