    Special Sauce
    1/2 Cup (125g) – Mayonnaise
    1–2 – Dill Pickles, Finely Diced
    1/4 – White or Brown Onion, Grated or Finely Diced
    2 Tbsp (40ml) – Tomato Ketchup
    2 1/2 tsp (15ml) – American Mustard
    1 tsp (4g) – Smoked Paprika
    1 tsp (4g) – Onion Powder
    1 tsp (4g) – Garlic Powder
    1/4 – Lemon, Juiced
    Pinch of Sugar (Optional)
    Salt & Pepper to taste

    Method
    Mix everything in a bowl. Chill until needed.

    Burger Patties
    1 tsp (5ml) – Vegetable Oil
    500g (1.1lbs) – 80/20 Beef Mince
    4 – Cheese Slices (avoid the plastic stuff)
    2–4 – Toasted Brioche Buns
    Lettuce, Tomato
    Pickles & Caramelised Onions (Optional)
    Salt & Pepper to taste

    Method
    Roll the mince into thick patties. Season well.
    Toast buns.
    Grill patties at 240°C/465°F, press lightly, and season one side.
    Sear 2–3 min, flip, add cheese, cook one more min. Rest.
    Build: sauce both buns, lettuce, tomato, patty, pickles, onions, top bun. Done.
