If the middle leafs on the crown pulls out easily it means that its not fresh or over ripe a fresh pineapples leafs do not pull out easily

No! That's BS… A pineapple is a living plant. If the leaves come out easy the pineapple was frozen during shipping or storage. It died. The leaves are beginning to rot.
The best way to tell if a pineapple is "perfectly ripe": look for the golden color and if it smells sweet like a pineapple then it has a good possibility of being ripe.
Good luck with that leaf thing. Just think about what kills a pineapple faster, cold air in the store or a chilling ride in an airplane.
If the leaves come out easily you won't be able to grow a new plant. It's dead.
If you want to grow a plant look for one that the leaves are firm. You might need to wait a week to see if the plant died in shipping. If the leaves stay firm after a week cut the top off of the pineapple fruit about an inch from the top. Peel off the bottom rows of leaves to expose the roots. Older tops might have roots growing. Stick the top in a large container such as a whiskey barrel with good potting soil. Keep the plant in a warm well lit space with full sun. The plant will take about 3 years to produce a new pineapple if all goes well.

Pineapples do not ripen after they are cut. Pulling the leaf is a sign of breakdown (decay) and will only tell you how firm the flesh is. Smelling the bottom is the absolute best way to determine how ripe it was when picked. You want a sweet smell, not moldy, acidic, or alcohol. Most store bough pines will not have much smell at all because they are picked young and are more acidic than sweet.
I picked mine by color. The ripe one is always yellow.

That's how I do it at the store, but I don't pick up the pineapple. I recommend avoiding the small center leaves, and go out a couple layers to a fresh looking medium one. In my experience from my landlocked state those are pretty much ready within a day or two. And if you want a better distribution of juices within the fruit, chop the top of the leaves leaving a flat foot to stand it upside down for a couple hours in the fridge. That lets the juice spread out again. Then YouTube "pineapple cutting hacks", and astound your friends

Or just look for a thorough golden color, all the way around. The greener it is, the less ripe it is!

Believe it or not smelling a pineapple is a good way to tell if it’s ripe. I don’t disagree with pulling one of the leaves to see if it’s ripe also.

A variation is picking up the pineapple by an inner leaf and let the weight of the pineapple do the work, so you don't have to wonder "The leaf came off but… was I pulling too hard?"
