The Best Fried Chicken Recipe Ever (Probably)



Dill Pickles
800g white pickling vinegar
400g water
60g salt
20g mustard seeds
2-5g red chilli flakes
5g turmeric
Bunch of dill
2 bay leaves
1-2 salad cucumbers

Chipotle Mayo
200g mayo
1 chipotle pepper + adobo sauce
Juice of 1/2 lime
Salt

Chicken brine (enough for about 10 pieces of chicken)
1000g water
50g salt
30g hot sauce

Fried chicken seasoning flour
300g flour
10g baking powder
6g salt
6g chicken boullion
3g white pepper
3g granulated garlic
3g onion powder
3g cayenne
3g black pepper
1g MSG

Chicken Boullion Powder –

You're a really cool guy mate; few serious points you made here I wanted to absolutely touch up on; yes most online recopies are indeed way too undersalted and those st.pierre buns are my FAVORITE – I had them a few years ago and they were the best ever burger buns I've ever had; I go back to the store; same section, buy another 4 pack; it was brioche; it was way too sweet on the burgers… I chalked it up to something else and not the bread; glad to know I can go back and look for the black label specifically; thx again my friend.

  2. Have you ever heard of poultry flour or buttermilk flour? I don't really brine bone-in chicken like I once did. I do it before smoking turkey legs, but bone-in chicken, I often just dry brine. Wow I find a lot of uses for that can of chipotles. I kind of wonder how it would taste if we cool down the pickle brin, and brine the chicken in in. I fry with beef tallow or a/v oil at something like 340

  3. Looks amazing!!! Definitely better than a cerysin froed chicken shop burger. If you wanted to do the brone without hot saice, can you do it and subdyitute the hot sauce for pickle juice or apple cider vinegar?
