Ingredients for the Mutton Korma Recipe :
– Mutton, curry cut pieces with bones -1 Kg
Marinade:
– Turmeric powder-3/4 tsp
– Red Chilli Powder-3 tsp
– Whisked curd/plain yogurt- 1 cup or 200 ml
– Ginger garlic paste-4 tsp
– Salt-2 tsp
Tempering:
– Cumin seeds-1.5 tsp
– Green cardamom- 8
– Cinnamon-4
– Cloves-8-10
– Bay leaf- 3-4
Spice Powders:
– Coriander powder-3 tsp
– Pepper powder- 3/4 tsp
– Garam Masala powder-3/4 tsp
Other Ingredients:
– Fried onions/birista crushed roughly- 4 medium onions-300 gms fried
– Cashew paste- 16 cashew nuts
– Kewra water- 1.5 tsp
– Groundnut oil-5-6 tbsp
– Ghee- 2 tbsp
Preparation:
– Whisk the curd/plain yogurt. Set aside.
– Marinate the mutton pieces with items specified above. Mix and set aside for 30-60 mins.
– Slice the onions and fry till golden brown. Set aside on a plate to cool. Once cooled, crush it coarsely with your hands.
– To make cashew nut paste add the cashew nuts to a grinder and grind it to a powder. Now add 3-4 tbsp water and blend it to a smooth paste.
Process:
– Heat oil and ghee in a pressure cooker and add the whole spices.
– Give a stir and then add the marinated mutton.
– Sear on high heat for around 4-5 mins and then add the crushed onion.
– Mix and fry on medium heat for another 3-4 mins.
– Now add the spice powders, mix and cook on low heat for another 3-4 mins till it’s cooked and oil separates.
– Now add the cashew paste and cook on low heat for 3-4 mins till oil separates
– Now add 350 ml water, mix and pressure cook for 3-4 whistles till meat is tender.
– Remove lid and optionally add the Keora water. Give a mix and simmer on low heat for 2-3 mins.
– Serve hot with roti or rice
