Beef Nalli Nihari Ingredients

1.578kg bones
1.820 kg Shank cut of beef
300g ghee
6 med size onions
4 tbs ginger garlic paste
1 cup water
5 tbs Homemade nihari masala

[2 tbs red chilli
1.5 tbs salt or add to taste
50g funnel
30g dried ginger ]

100g whole wheat
1 cup water

Water for meat tenderising

Fry the onion on high heat for the first five minutes, then reduce the heat to medium

The rawness of the onion should be cooked thoroughly, but the color of the onion should not change, i.e. it should not be brown, light brown, or dark brown.

You have to be very careful in this first stage of Nihari.

The bones and meat should be fried well. It’s better for best taste of nihari

We separate the oil from the Nihari because when we add the flour, the flour absorbs the oil. Then it causes problems later.
