Here is the recipe:
454g/ 1 lb. Skirt/Flank steak or steak of your choice.
For the Asada Marinade:
8g/ 2 tsp. minced garlic
56g/ 4 tbsp. orange juice
42g/ 3 tbsp. lemon juice
28g/ 2 tbsp. lime juice
72g/ 1/3 cup olive oil
14g/ 1 tbsp. apple cider vinegar
14g/ 1 tbsp. tequila (optional)
1g/ ¼ tsp salt
1g/ ¼ tsp black pepper
4g/ 1 tsp ground cumin
8g/ ½ cup chopped cilantro.
Directions:
In a medium bowl, add all the marinade ingredients and combine.
In a large baking pan, add the steak and marinade and combine.
Cover with cling wrap and place in the fridge to marinate for 4 hours.
Remove and allow steak to come to room temperature
Preheat oven to 350F/176C
Heat a grill pan over medium-high heat (brush with oil first).
One pan gets HOT transfer beef to the grill.
For medium rare 135F/57C grill for 3-5 minutes on each side.
For medium 145/63C grill for 4-6 minutes on each side.
For medium well 155F/68C grill for 5-7 minutes on each side.
For well-done 165F/74C grill for 6-8 minutes on each side
NOTE: These times are approximate.
The steak was cooked to medium-rare (10 mins in the oven.)
Allow steak to rest for 5-10 minutes before slicing.
Slice steak on the bias and serve with Cilantro Lime rice.
For the Cilantro Lime Rice:
473ml/ 2 cup boiling water
2g/ ½ tsp salt
185g/ 1 cup of long or short grain rice
21g/ 1.5 tbsp. unsalted butter
42g/ 3 tbsp. lime juice
8g/ 2 tsp. lime zest
8g/ 2 tsp. chopped Cilantro.
Directions:
In a medium saucepan over medium heat, melt the butter.
Add the salt and combine.
Add the rice and stir for 1 minute.
Add the boiling water and combine.
Cover with lid, then reduce to a simmer.
Simmer for 18-20 minutes until rice is done.
Add the lime juice, lime zest and chopped cilantro and fluff/combine.
Cover until ready to serve.
