  1. NOOOOOOOOOOOOOO!!!!!!! WRONG WRONG WRONG! The point of 'alla norma' is to deep fry the eggplants chunks. There's no onion and no ricotta! You roughly grate fresh young cheese on top and do NOT stir! You made a alla-norma-non-resembeling terrible mess! WHY? WHY? WHY? It's so simple to do it right! My retarded blind 96-year old uncle without one arm can do it.

  2. Sorry man, you didn't sweat the eggplant (not shown)? And you're effectively steaming it in the pan? It's gonna be a very serious "hell no!" From me.

    Eggplant that hasn't been properly salted and allowed to sweat is astringent and absolutely nasty 🤮🤢.

    And then steaming or boiling it ensures that it's got the worst hot snot texture.

    I avidly avoid eggplant and these are probably the two biggest reasons why I do.

    I'll eat eggplant that is properly prepared and then baked or fried to fight that hot snot texture, HOWEVER I will NEVER spend my money on an eggplant, raw or cooked in any fashion. If it costs me a single penny then it's more than I'm willing to spend.
