Why always cinnamon ? Apples are tasty enough, when you add cinnamon apple taste disappears and you only have cinnamon in your mouth. I notice that American cuisine and English cuisine are always full of spices, you never taste the genuine perfume of ingredients. Try to use only salt and maybe pepper and you will see the difference.
