Ingredients

Pork Meatloaf:
• 3 lbs ground pork
• 1 cup Panko breadcrumbs
• 1 tbsp dried parsley
• ¼ tsp ground thyme
• 1½ tsp kosher salt
• ½ tsp black pepper
• 2 eggs
• ¼ cup milk
• 1½ tsp ground mustard
• 1 tbsp Worcestershire sauce
• 1 onion, diced
• 1 green bell pepper, diced
• 2 tbsp butter

Onion Gravy:
• 1 onion, diced
• 2 tbsp butter
• 2 cups beef broth
• 1 tsp kosher salt
• ¼ tsp black pepper
• 1 tbsp cornstarch
• 1 tsp mustard
• 1 tbsp Worcestershire sauce
• ¼ tsp ground thyme

Instructions

For the Pork Meatloaf:
1. Preheat oven to 400°F. Spray a 9” loaf pan with nonstick baking spray.
2. In a sauté pan over medium heat, melt butter. Add onion and bell pepper. Cook until onion is translucent, then let cool.
3. In a large mixing bowl, combine all ingredients including the cooled onion and pepper. Mix until just combined.
4. Transfer mixture to the prepared loaf pan, pressing evenly.
5. Bake 50–60 minutes or until the internal temperature reaches 160°F. Let rest for 15 minutes.

For the Onion Gravy:
1. In a saucepan over medium heat, melt butter and add onion. Cook until translucent.
2. Whisk cornstarch into beef broth, then pour into the saucepan.
3. Add remaining ingredients and cook 10 minutes, or until thickened. Adjust seasoning to taste.

Serve meatloaf sliced, topped with onion gravy, alongside mashed potatoes or your favorite side.
