  1. 2 cups grated fresh carrots
    1 1/2 cups of flour
    1 cup sugar
    2 tsps vanilla extract
    1 tbs agave or honey
    2 eggs
    1 stick of butter melted
    1/2 tsp baking soda
    1/2 tsp baking powder
    1/2 cup of Greek yogurt
    Cinnamon
    Nutmeg is optional
    Add nuts or raisins if you have them (or like them)

    Mix dry ingredients. Mix wet ingredients and then combine. Bake for 30 mins at 350 degrees in a 8×8 pan, or 55 mins in a bread pan. Enjoy!!!!
