How to Make Henan Style Mian Jing – The Ultimate Comfort Food
Recipe in Point Form:
Ingredients:
Fresh noodles (or any long pasta like spaghetti or lo mein
Pork belly or pork shoulder, sliced
Soybean sprouts
Green beans
Scallions, Ginger
Aromatics: Star anise, cinnamon, bay leaves, dried chilies
Light soy sauc
Dark soy sauce (for color)
Salt
Chicken bouillon powder
Sichuan peppercorns (optional)
Cooking oil
Instructions:
1. Prepare the Noodles:
Toss the raw noodles with one spoonful of cooking oil to prevent sticking.
Place them in a steamer basket over boiling water.
Steam for 15 minutes. Remove and set aside.
2. Cook the Pork & Aromatics:
Heat oil in a large pan or wok.
Add sliced pork belly and stir-fry until golden and until excess fat is rendered.
Add star anise, cinnamon, bay leaves, scallions, ginger, and dried chilies. Stir-fry until fragrant.
Add light and dark soy sauce and stir-fry to coat the pork.
3. Create the Stewing Broth:
Add the soybean sprouts and green beans to the pan. Stir-fry until they begin to soften.
Pour in an appropriate amount of hot water (enough to almost cover the ingredients).
Season with salt, chicken bouillon, and Sichuan peppercorns.
Cover and cook over high heat until the beans are tender and a flavorful broth is created.
4. Combine and Steam:
Uncover and add the pre-steamed noodles to the pan.
Use chopsticks to stir and toss evenly, allowing the noodles to fully absorb the delicious broth.
Once combined, transfer everything back to the steamer.
Steam again for another 10 minutes to meld the flavors and achieve the perfect soft and chewy texture.
5. Serve:
Serve hot, garnished with extra chopped scallions if desired.
