Suji bread, also known as semolina bread, is made using semolina flour (suji) and has a distinct texture and flavor. Here’s a simple recipe for making suji bread:

Ingredients:
– 250g semolina (suji)
– 1 tbsp sugar/ brown sugar
– 1 tsp salt
– 1 tsp active dry yeast
– 2 tablespoons olive oil & for brushing
– 80ml cup warm water
– 80ml cup warm milk + for milk wash
– 1 tbsp milk powder (optional)
– Additional water as needed

Instructions:
1. Activate the Yeast:
– In a cup/small bowl, mix the warm water with sugar.
– Sprinkle the yeast over the water and let it sit for about 10-15 minutes until it becomes frothy.
2. Prepare the Dough:
– In a large mixing bowl, combine the semolina, milk powder and salt.
– Mix it well and add the frothy yeast mixture.
– Mix the ingredients together, adding milk gradually. Add 1 & half tbsp olive oil to form a soft dough.
3. Knead the Dough:
– Transfer the dough to a flat surface and knead for about 10 minutes until it becomes smooth and elastic. (or in the machine as shown in the video)
4. Shape the Bread:
– Shape it into a loaf or desired shape and place it on a baking sheet lined with parchment paper or in a greased loaf pan.
5. Rise:
– Cover the shaped dough with a damp cloth or plastic wrap and let it rise in a warm place for about 40-50 minutes, or until it has doubled in size.
6. Bake the Bread:
– Preheat your oven to 375°F (190°C).
– Once the dough has risen, brush the top with milk for a nice golden crust.
– Bake the bread in the preheated oven for 35-40 minutes.
7. Cool the Bread:
– Remove the bread from the oven, brush it with some olive oil and let it cool on a wire rack before slicing.
