    Restaurant Style Black Mutton Pepper Fry Recipe
    Ingredients
    1 kg mutton
    25–28 small onions (sliced) / 4 big onions (sliced)
    1 medium tomato (optional)
    2 tbsp ginger garlic paste
    4 sprigs of curry leaves
    4 dry red chillies
    ¾ tsp turmeric
    2 tsp coriander powder
    1 tsp garam masala
    Salt – as needed
    5 tbsp Gingelly Oil (add 1½ tbsp ghee for restaurant touch)
    Coriander leaves – handful

    For Black Masala (roast & grind):
    5–6 tsp black pepper
    1½ tsp cumin
    1 tsp fennel
    2 dry red chillies

    Instructions (Short)
    1. Cook Mutton
    Pressure cook mutton with 1½ tbsp ginger garlic paste, turmeric, salt, 1 tsp pepper & 1 cup water for 6–7 whistles.
    Keep stock aside.

    2. Make Black Masala
    Roast pepper, cumin, fennel & red chilies till dark brown, grind coarse.

    3. Fry Base
    Heat oil + ghee, splutter curry leaves & dry red chillies.
    Add onions, fry till deep golden/brownish-black.
    Add ginger garlic paste and sauté.
    (Optional) Add tomato & cook until mushy.

    4. Add Masala & Mutton
    Mix coriander powder + garam masala.
    Add cooked mutton with lita tle stock, fry till absorbed.

    5. Black Finish
    Add roasted black masala + 2 tsp crushed pepper.
    Toss on high flame till oil coats and jea t-black fry look comes.

    6. Garnish
    Sprinkle curry leaves & coriander leaves.
