Ingredients:
Make 4 Brownies

Brownie:
1 cup (240g) pumpkin purée
1 cup (227g) 0% Greek yogurt
2/3 cup (144g) monkfruit
2 eggs
1 tsp vanilla
1 cup (80g) dark cocoa powder
2 scoops (37g) protein

Pistachio Filling:
1 cup (~200g) kataifi
1 tbsp (14g) light butter
1/3 cup (90g) pistachio butter

Topping:
1 chocolate bar (I used gatsby chocolate)

Cooking Directions:
Preheat oven to 350F
Mix brownie ingredients.
Pour into loaf pan and bake for 25-30 min or until set (do not overbake or it’ll ruin fudginess)
On a pan on low – med heat, add butter and kataifi. Stir kataifi for about 5 minutes or until it becomes golden then add pistachio paste.
Mix chocolate frosting ingredients.
Once brownies are ready, top with pistachio filling and flatten it out evenly then add frosting.
