Artisan Bread Recipe (Without a Dutch oven)

Ingredients:
1 tsp activated yeast
2 tsp sugar
1 ½ cups water – 375ml (108°F / 42°C)
1 tsp vinegar
1 tsp salt
3 cups flour (1 cup = 250ml)

Recipe:
Artisan Bread Recipe (Without a Dutch oven)
Activate Yeast:
1 tsp yeast + 2 tsp sugar
1.5 cups water (375ml, 108°F) → Stir & let sit 5-10 min until foamy

Mix Ingredients:
Add 1 tsp vinegar + 1 tsp salt, mix well
Add 3 cups flour (750ml, approx. 375g / 13.2oz) → Mix until no dry flour remains

First Rise:
Cover & let rise 1.5 hrs in a warm place (oven off works well)
Fold & Second Rise:
Use a spatula to fold all sides toward the center
Cover & proof another 1.5 hrs

Bake:
Preheat oven to 450°F (232°C)
Place dough in a cast iron pan & cover with foil
Bake 35 min (foil on)
Remove foil → Bake another 15-20 min until golden brown

Cool & Serve:
Let bread rest 20 min – 1 hour before cutting (If you can wait that long)

  3. My dough was very wet and sticky for some reason, no extra water added or skipped waiting time, i am adding more flour and letting it rise for a while longer and will see what happens. (Edit: I added more flour last minute, and it still came out pretty decent.)

    Mine wasn’t as brown as yours but my Dutch oven wasn’t as close to the top element as yours… maybe that’s why? still sounds crunchy and hope it tastes as good as yours looks! Thank you.. a new subscriber from Ontario Canada 🇨🇦 and my first loaf!

  5. This looks fantastic, reminds me of a San Francisco sourdough bread bowl for clam chowder. Do you have a easier sourdough bread recipe? I’d like to make but the sourdough process takes a longtime, plus seems tricky with disgardimg starter and then refreshing the starter. Thank you for listening.
