Instant Pot Beef Tacos
Ingredients:
• 2–3 lb chuck roast, cut into large chunks
• Salt, paprika, and cumin (to taste)
• ½ onion, chopped
• 3 garlic cloves, minced
• 1 (4 oz) can green chiles
• ½ cup tomato purée
• ½ cup beef broth
• 1–2 tbsp taco seasoning
• ½ lemon, juiced
• 1 tsp salt (plus more to taste)
• Extra paprika or cumin, if desired
Instructions:
1. Season the chuck roast with salt, paprika, and cumin on all sides.
2. Turn on the Instant Pot to sauté mode. Add a bit of oil and sear the meat on all sides until browned. Remove and set aside.
3. In the same pot, add the chopped onion and garlic. Sauté for 1–2 minutes until fragrant.
4. Stir in the green chiles, tomato purée, beef broth, taco seasoning, lemon juice, and 1 tsp salt. Taste and adjust seasoning as needed.
5. Add the seared beef back into the pot and spoon some of the sauce over the top.
6. Close the lid, set to “Sealing,” and pressure cook on High for 60 minutes.
7. Let the pressure release naturally for 15 minutes, then quick release any remaining pressure.
8. Shred the beef in the sauce and serve in tacos with your favorite toppings!
