For Jonny’s dish, he chose Poulets a gogo a family run French rotisserie chicken restaurant. A dish that lives long in his memory, family picnics on the beach, the flavours of the chicken and potatoes ‘sweating’ in the takeout box and the mother of all pan sauces made from the chicken fats that dripped off of the rotisserie.

I did my best at recreating this for him, and we drank Ruinart and ate chicken and potatoes. Full recipe on my channel

    1 x Somerset saxon chicken
    1x Butterhead Lettuce
    1x bulb of garlic

    1x lemon
    1x Teaspoon Dijon Mustard
    500g charlotte potatoes (large new potatoes)
    50ml chardonnay vinegar
    10g Herbes de Provence

    300ml good quality olive oil

    Maldon salt

    Black pepper

  2. We used to get completely free range birds from a guy on a farm, he just let his young daughter look after them. They had fields and fields to roam in. They were MASSIVE! A small bird was 6.5kg, we used to call them dinosaurs
