Last year, I forgot to buy the cream of mushroom soup, but I had golden mushroom soup and cream, so I used those. It was fantastic! I also put criminal mushrooms in mine as well. So you can try golden mushroom soup in stead of chicken soup too!
Don't add salt to the mushrooms until after they have browned. If you do it before then the mushrooms release all their moisture which will make them steam instead of brown.

This is a legitimate question… why shallots instead of onion? So many recipes call for them, but I don't understand the difference. I am a home cook who does basic cooking for my family, so use general terminology, please
