Thank you for watching my smoked turkey video. On this video, I smoked a turkey that was in my freezer for 2 1/2 years! I honestly didn’t think it was any good but it was at the very bottom of my freezer so it was well preserved. If you have a turkey in your freezer and you’re constantly opening the door, that turkey may not be edible. Use your best judgment.

Removing the backbone destroys the oysters. You can also not cut the backbone out by only cutting one side to spatchcock it.
I have wanted to do a turkey for years. Do you think my reqtec, or offset, or weber kettle would be best for it?

Enjoyed the cook very much. If that turkey was frozen the entire time I'd have no issue with cooking it and eating it. If you had a few power outages along the way that lasted a while, I might have had some reservations. But worst case scenario it probably wouldn't have been life threatening. ๐
I have a turkey that's been in my deep freeze for a little over 18 months. I was really skeptical that it would be any good by now. I was thinking it might not be any good to use for Thanksgiving this year and I resigned myself to going out and getting another bird. However, not only did you give me great tips for smoking my turkey, you gave me hope that old bird in the deep freeze is still useable! So, fingers crossed my bird is still good just like yours. Thank you!!
Let gravity be your friend. Cook the turkey breasts DOWN when you cook a whole turkey. If you cut through the breast plate, you don't need to cut the backbone.
Try brining with MALTOSE. It is better that Brown Sugar by far. Black Strap Molasses is great too. Let it be your secret. Don't tell anyone.
