Ingredients:
• 200g (7 oz) white chocolate (high-quality, such as Lindt or Callebaut), chopped into small pieces
• 1 can (395g/14 oz) sweetened condensed milk
• 100g (1/2 cup) unsalted butter, cubed
• 2 large eggs (room temperature)
• 1 tsp vanilla extract (preferably pure)
• 1 1/2 cups (190g) all-purpose flour
• 1/2 tsp baking powder
• 1/4 tsp salt
• 1/2 cup (90g) white chocolate chips or chunks (for extra texture)
• 1/4 cup (50g) sugar (optional, depending on your sweetness preference)
Instructions:
1. Preheat the oven to 175°C (350°F). Line a 9×9-inch square baking pan with parchment paper or lightly grease it.
2. Melt the white chocolate and butter: In a heatproof bowl, combine the white chocolate and butter. Place it over a pot of simmering water (double boiler method), stirring occasionally, until the chocolate and butter are fully melted and smooth. Alternatively, you can microwave the mixture in 20-second intervals, stirring in between.
3. Mix the wet ingredients: In a separate bowl, whisk together the sweetened condensed milk and eggs until smooth and slightly frothy. Add the vanilla extract and whisk until incorporated.
4. Combine the chocolate mixture with wet ingredients: Once the white chocolate and butter mixture has cooled slightly, add it to the condensed milk and egg mixture. Stir until fully combined.
5. Prepare the dry ingredients: Sift together the flour, baking powder, and salt in another bowl. Gradually fold this into the wet ingredients, stirring just until combined. Be careful not to overmix.
6. Fold in the chocolate chips: Gently fold the white chocolate chips or chunks into the batter.
7. Bake: Pour the batter into the prepared pan, spreading it evenly.
