Kunafa Tiramisu Recipe

This no bake recipe is perfect for Eid or any festive occasions.
Ingredients:
* For the Kunafa Layer:
* 100 gms Katifi (shredded phyllo dough)
* 50 gms Ghee (melted)
* 50g Pistachios (finely chopped)
* For the Mascarpone Cream Layer:
* 1/2 cup Mascarpone cheese ( skip this if you can’t find)
* 1 cup Whipping cream
* 1/2 cup Sugar
* 1/2 tsp Cardamom powder
* For dipping:
* 1/2 tsp crushed overnight soaked Saffron threads @mizan.saffron
* 1 cup Milk

Instructions:
Step 1: Prepare the Kunafa Layer
1. In a large pan, toss the shredded Kataifi pastry with melted ghee until well-coated and cook on medium heat until golden. Keep aside.
Step 2: Prepare the Mascarpone Cream base
1. In a large mixing bowl, combine mascarpone cheese, whipping cream, sugar, pinch of cardamom powder.
2. Whisk the mixture until smooth and creamy, ensuring all ingredients are fully incorporated, transfer to piping bag for easy piping or you can also skip this and use spoon for spreading.
Step 3: Prepare the Ladyfingers Layer
1. In a shallow bowl, combine milk, sugar and saffron strands.
2. Quickly dip each ladyfinger into the milk mixture until they are slightly firm and not completely soft.
Step 4: Assemble the Tiramisu
1. Layer the lady fingers at the bottom of the container and spread/ pipe the mascarpone cream mixture evenly over the top
2. Add roasted kaitifi and pistachios on top and repeat layers until you get a minimum of two layers but three layers work even better.
3. Set it in a fridge for 1-2 hours
