Nice piece of pork, first time I have seen it filleted and opened up like that, that is a wonderful idea to get lots of goodies in there. I don't know which one I like the best they both look so good, I think I'm leaning more towards the last one though. This is something I'm going to definitely make the next time I get a pork loin!!
