🥟 Unwrapped Spicy wonton (Chili Oil Dumplings, No Wrapping Needed!)
Ingredients
Filling
Ground pork … 260 g
Leek (finely chopped) … 40 g
Sake (or cooking white wine) … 2 tbsp
Salt & pepper
Ginger powder … 1/2 tsp
Oyster sauce … 1 tbsp
Chicken bouillon powder … 1/8 tsp
Water … 50 ml
Chili Oil Sauce
Chili oil (Laoganma) … 30 g
Oil … 1 tbsp
Sugar … 1.5 tsp
Chinkiang vinegar … 1 tbsp
Light soy sauce … 1 tbsp
Garlic … 1 clove, grated
White leek … 3 tsp
Ground sesame … 1 tsp
Sesame oil … 1 tsp
Water … 1 tsp
Dumpling wrappers … about 15 pieces
How to Make
① Mix all sauce ingredients in a bowl and set aside.
② Mix all filling ingredients until sticky.
③ Lightly coat a heatproof dish with sesame oil + a little water.
④ Place dumpling wrappers on the bottom, add the filling, then top with another wrapper.
⑤ Steam over high heat for 10–15 minutes.
⑥ Pour the chili oil sauce over the top and enjoy while hot!

豚ミンチ … 260g
LEEK(白ネギOK)… 40g(みじん切り)
酒 … 大さじ2
塩・こしょう
ショウガパウダー… 小さじ1/2
オイスターソース … 大さじ1
中華チキンパウダー … 小さじ1/8
水 … 50ml
紅油ソース
ラー油(老干妈)… 30g
油 … 大さじ1
砂糖 … 小さじ1.5
黒酢(鎮江香醋) … 大さじ1
醤油(生抽)… 大さじ1
にんにく(すりおろし)… 1かけ
白ネギ … 小さじ3
すりごま … 小さじ1
ごま油 … 小さじ1
水 … 小さじ1
餃子の皮 … 約15枚
【作り方】
① ソースの材料をすべて混ぜておく。
② 具の材料をすべて混ぜ、しっかりこねる。
③ 耐熱皿にごま油+水を薄く塗る。
④ 餃子の皮を敷き、具をのせて上にもう1枚皮をのせる。
⑤ 強火で 10〜15分蒸す。
⑥ 仕上げに紅油ソースをかけて完成!

Gotta make sure that's steamed a long time. Raw pork. Not comfortable with seeing raw pork anywhere that isn't baking or frying or immersed in boiling water
Instructions unclear the heatproof dish has burned my fingers while trying to take it out the pan.
