Chinese fried chicken | recipe



ingredients:
4 leg quarters

for the brine
6 cups water
2 tbsp salt
2 tbsp sugar
soak the chicken in the brine over night

for the broth
10 cups water
1 cup soy sauce
1/4 cup Hoisin sauce
2 tbsp sugar
1 tbsp chicken bouillon
1 tsp Chinese 5 spice
1/2 tsp white pepper
2 star anise
4 slice ginger
6 cloves garlic
4 stalks green onions

  1. Looks like restaurant served chicken there are no real Chinese restaurants where I live in NC. I grew up in NYC and use to eating in restaurants not so much take out shops. My question is, what oil for frying did you use and does the type of oil matter ? How much corn starch should be used ? And can you use this recipe for duck or do you have one for duck specifically ? Thank you for your easy follow recipes and instructions. Happy New Year
